Have you ever tried mushroom carbonara? This is your sign! We've revisited the mythical carbonara and it's just incredible! You HAVE TO try it, we promise, you won't be disappointed!
8 oz - 250g bacon, cut into thin strips
1 diced red onion
12 diced garlic cloves
7 oz - 220g canned mushrooms
5 oz - 150g tomato paste
Diced sun dried tomatoes
7 oz - 200g creamy carbonara sauce 200g
Grated cheese of your choice
6 knobs of butter
1 pack spaghetti pasta
In a hot pan fry your bacon until it’s crisp while allowing the fat to render. Remove the bacon once cooked, and set aside for later.
In that same pan, add your chopped onions and garlic along with some canned mushrooms, and saute. Add tomato paste, and diced sun dried tomatoes and stir.
Add the creamy carbonara sauce and mix until combined. Add shredded cheese and mix before adding in your pasta along with some pasta water.
Lastly, a few knobs of butter and begin to toss or stir your pasta. Serve topped with crispy bacon and enjoy!
