Onions are soooo underrated! This recipe brings them back in the spotlight!
It's super easy and SUPER TASTY! The chili oil balances perfectly the sweetness of the caramelized onions, it's just too good.
7oz - 220g spaghetti
2 tbsp chili oil
1/2 cup - 240ml cream
1 large red onion
3 tbsp olive oil
3-4 cloves of garlic
1 tbsp Italian seasoning
Salt to taste
To garnish : parmesan and chopped parsley (optional)
Start by cutting the red onion into thin slices.
Heat up water, once boiling add in 2 tsp salt and spaghetti (can use any pasta). Cook according to the package instructions.
In a separate pan, add olive oil, heat up on medium heat for a few minutes until the oil is nice and hot (not smoking) and add in the onions and caramelize on medium heat (roughly 6-7 minutes).
Once caramelized add in chopped garlic cloves, chili oil and cream.
Add the Italian seasoning, salt to taste and, optionally, Parmesan and chopped parsley.
Now mix it all up and enjoy!
